Shinwari Chicken Karahi is a delicious and aromatic Pakistani dish that’s popular for its unique flavors and a special cooking style. It originated from the Khyber Pakhtunkhwa province and later got famous all over Pakistan, though, its traditional cooking style remained unchanged throughout the country. Here’s a recipe for you to enjoy:

Ingredients:

  • 1 whole chicken, cut into pieces
  • 4-5 large tomatoes, whole
  • 1/2 cup cooking oil
  • 4-5 green chilies, sliced
  • 2 tablespoons ginger garlic paste
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Fresh ginger, julienned for garnish
  • Lemon wedges for serving

Prep Time: 10 mins

Cooking Time: 25 mins

Instructions:

  1. Prepare the Chicken:
    • Wash the chicken pieces thoroughly and drain excess water.
    • Optionally, you can marinate the chicken with some salt, ginger-garlic paste, and a pinch of turmeric for about 30 minutes to enhance flavor.
  2. Heat Oil:
    • Heat oil in a large karahi or deep skillet over medium heat.
  3. Add Chicken:
    • Add the chicken to the hot oil.
  4. Add Ginger Garlic Paste:
    • Add ginger-garlic paste and cook for 10-15 minutes on medium flame.
  5. Add Tomatoes:
    • Add tomatoes to the skillet and cook until they are softened and then remove the skin. Mix well so that tomatoes turn into a paste.
  6. Spices:
    • Now, add red chili powder, turmeric powder, and salt to taste. Mix well and cook for a couple of minutes.
  7. Add Green Chilies:
    • Now, add sliced green chilies and mix well. Turn off the flame.
  8. Garnish:
    • Garnish the Shinwari Chicken Karahi with freshly chopped coriander leaves and julienned ginger.
  9. Serve:
    • Serve hot with naan bread or steamed rice, and lemon wedges on the side. Traditionally, it is served in the same Karahi or deep skillet in which it is cooked with naan bread.
